Salmon Quinoa

Ingredients:

  • 1 clove of garlic, minced
  • 1 tsp dried dill
  • 4 organic or wild salmon fillets
  • 1 red pepper
  • 1 cup uncooked quinoa
  • 2 tbsp extra virgin olive oil
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1/2 cup cilantro, chopped
  • 3 green onions, chopped
  • 1/2 cup black olives, chopped (optional)

Directions:

  1. Preheat the Oven:
    • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Prepare the Salmon:
    • In a small bowl, mix minced garlic, dried dill, salt, and pepper.
    • Spoon the garlic and dill mixture over each salmon fillet.
  3. Bake the Salmon:
    • Place the seasoned salmon fillets on the prepared baking sheet.
    • Bake for 10-15 minutes or until the fish flakes easily when tested with a fork.
  4. Cook the Quinoa:
    • Cook the quinoa as directed on the package. Once cooked, set it aside to cool.

    • In a large bowl, combine extra virgin olive oil, oregano, salt, and pepper. Whisk until well mixed.
    • Add the cooled quinoa, cilantro, green onions, black olives (if using), and diced red pepper to the bowl.
    • Toss the ingredients together until evenly coated with the dressing.
  6. Serve:
    • Serve the Mediterranean Quinoa Salad at room temperature, topped with a salmon fillet.
